Li’l Kick Seasoning Smoked Meatloaf


Ingredients

  • 3 lbs. ground beef (Ground Turkey can be substituted)
  • 3 eggs
  • 1 cup bread crumbs ( I used leftover bread ends)
  • 3 teaspoons Li’l Kick seasoning
  • 1/2 cup BBQ sauce of your choice (Working on my own sauce recipe)

Prep time: 30-45 min.

Cook time: 1.5 hours or until internal temperature of meat reaches 140 degrees

Cooking method: Pellet Smoker or oven

Servings: 6-8

Instructions

  • Mix ground beef, eggs, bread crumbs, 2 teaspoons of the Li’l Kick spice 1/4 cup of the BBQ sauce in a mixing bowl.
  • Remove and form into a loaf (if using oven method use a loaf pan) in a smoker just form into a loaf.
  • place in freeze for 30 min.
  • Preheat smoker or oven to 350 degrees
  • Remove from freezer, place loaf directly on smoker rack (in oven place loaf pan in oven)
  • Cook until internal temp. reaches 140 degrees
  • Remove from smoker or oven, let sit for 15 minutes.
  • Slice and enjoy!
  • if you have leftovers, heat on stove top for a grilled cheese sandwich!!!!
