Sloppy Joe Stuffed Peppers


Ingredients

  • 4 Bell peppers / use red, yellow and orange for a nice pretty presentation
  • 1- 1/2 lbs. Ground beef or Turkey
  • 2 Tbs. Olive oil
  • 1 Medium sweet onion
  • 1 tsp. Minced garlic
  • 1 Tbs. Tomato paste
  • 1 Tbs. (to taste) Hangry Spice Li’l Kick Spice
  • 1 cup Tomato sauce
  • 1/3 cup Ketchup
  • 1 Tbs. Worcestershire sauce
  • 1 Tbs. Apple cider vinegar
  • 1 Tbs. Brown sugar
  • 1 cup your favorite shredded cheese (Monterey Jack is great for this recipe)

Prep time: 25 minutes

Cook time: 45 minutes or until peppers are soft

Cooking method: Pellet smoker if you have one, Grill or an oven works great also

Servings: 8

Instructions

  • Pre heat your oven or smoker to 350 degrees
  • Add olive oil to sauté pan over medium heat, add onions and cook until translucent
  • Add garlic and tomato paste, cook approx. 2-3 minutes
  • Stir in ground beef or turkey, Hangry spice Li’l Kick, cook until brown 6-8 minutes
  • Reduce heat to low, stir in Worcestershire sauce, tomato sauce, ketchup, apple cider vinegar and brown sugar
  • Cook until incorporated, remove from heat and let cool
  • Cut pepper in half lengthwise
  • Stuff with cooled sloppy joe mixture
  • Top with shredded cheese
  • Cook pepper in the oven on a sheet pan / in a smoker directly on the grates
  • Cook approx.. 45 minutes until peppers are soft
  • Remove from oven, grill or smoker, let cool and ENJOY!
